Spring according to Claire Vallée is a dish as crunchy as crunchy. That's why his plate "spring" is decorated with small ultra-fine tiles reminiscent of papadums, those crunchy chips of Indian cuisine.

The vegan chef prepares them with pistachio paste, chickpea flour and chlorophyll extracted from the green of onions stems.

This is the second step of the recipe "spring" that Claire Vallée offers this week to the readers of 20 Minutes. Since Monday, you can indeed follow the five stages of one of the signature dishes of his book Non-animal origin (ed. Chêne). The plate, delicate and colorful, is composed of strawberries and asparagus with pistachio and chlorophyll tiles and a grilled grapefruit pomegranate vinaigrette. Ingredients

50 g wheat flour T55

25 g chickpea flour

10 g pistachio paste

10 ml onion stem juice

2 cl warm water

4 g fleur de sel

Preparation

For the juice of onion stems, from which will be extracted the chlorophyll that will give its green hue to the recipe, cut into pieces and mix or pass to the extractor.

Then knead all the ingredients, let the dough rest ideally overnight in the refrigerator. The next day, spread it over a thickness of one millimeter.

Preheat oven to 160°C. Cut sheet shapes with a cookie cutter or knife, then apply a leaf pattern using a silicone impression. Bake for 10 minutes and reserve in an airtight box.
